OZARK PUDDING | |
1 egg 1/2 c. white sugar 1/4 c. brown sugar 1 tsp. vanilla 1/2 c. all-purpose flour 1 tsp. baking powder 1/2 tsp. salt 1/2 c. nuts, chopped (pecans seem to taste best) 2 or 3 diced apples (with skins on) 1 tsp. to 1 tbsp. butter Use a 9 inch oven-glass pie pan. In a small mixer, combine all ingredients except nuts and apples. Beat at high speed until mixed smoothly. Will be thick. Stir in apple and nuts. Hold. Melt butter in pie plate and tilt to cover bottom evenly (used for flavoring only). Spread the batter evenly in pie pan. Bake at 325 degrees (350 degrees for metal pan) for about 30 minutes or until attractively browned on surface. (should bubble and boil briefly at end). Serve either warm or cold. Good with whipped cream or vanilla ice cream. Great with the apples in the fall. |
