LEMON RICE 
1 garlic clove, minced
2 c. chicken broth, fresh, from cubes or cans
2 c. quick cooking rice, like Minute Rice
1 tbsp. lemon juice
Parsley, fresh or dried, 1 to 2 tbsp.
1 tbsp. butter

In saucepan, saute garlic in butter for 1-2 minutes. Add broth, and bring to full boil. Stir in rice, turn off heat, after 5-10 minutes add lemon juice and parsley, and serve. Great with fish or chicken dishes. Serves 6.
