POLYNESIAN CAKE - CARROT 
1 1/2 c. corn oil
2 c. sugar
3 eggs
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
2 c. shredded carrots
1 c. chopped nuts
1 sm. can crushed pineapple
1 box coconut (optional)

Combine all above in one bowl and mix with spoon. Do not use mixer. 9 x 13 inch pan, greased and floured. Bake at 350 degrees for approximately 50 minutes. Keep cake in refrigerator.

Cream cheese frosting is delicious with this cake.
