HOT BAKED CHICKEN SALAD 
1 diced pimento
2 1/2 c. cooked chicken
1 (8 oz.) can water chestnuts
1/2 c. sliced almonds, toasted
1/2 c. fresh mushrooms, cooked
2 tbsp. lemon juice
1 1/2 c. Miracle Whip
Salt and pepper to taste
1/2 c. grated cheddar
1 c. French fried onions

Mix first 8 ingredients. Add salt and pepper to taste. Top with cheddar and fried onions. Put in Pyrex tray. Bake 30-40 minutes at 350 degrees. Serves 6.
