STUFFED POTATO SKINS 
Bacon
6 potatoes
Cheddar cheese
Sour cream (optional)
Scallions

Bake potatoes until done. Cut in half. Scrape out middle with spoon leaving some potato left on the skins. Deep fry until golden brown. Drain on paper towel. When you're finished frying the skins, stuff with bacon and cheese. Bake on 350 degrees until cheese melts. Then serve. If you like sour cream and scallions serve your skins with that. Great snack at parties.

Makes 12 (can make more depending on how many potatoes you use).
