POT LUCK CHICKEN CASSEROLE 
8 chicken breast halves, cooked, boned and cut up
2 (10 3/4 oz.) cans cream of chicken soup
24 oz. sour cream
1 (12 oz.) pkg. Ritz crackers (containing 3 stacks)
Poppy seeds
1/2 stick butter, melted

Mix soup and sour cream. Crush 2 stacks of crackers, reserve third stack for another use.

In a 3 quart casserole alternately layer chicken soup mixture and 1/2 cracker crumbs. Sprinkle poppy seeds over cracker crumbs until lightly covered. Repeat. Drizzle melted butter on top. Bake at 350 degrees until it bubbles. Serves 10-12.
