DEVILED SWISS STEAK | |
1/4 c. all purpose flour 2 tsp. salt 1/4 tsp. pepper 1 1/2 tsp. dry mustard 3 lb. round steak, cut 1 1/2" thick 1/4 c. cooking oil 1/2 c. water + 1 tbsp. Worcestershire sauce 1 (3 oz.) can broiled mushroom crowns, drained Combine flour, salt, pepper and dry mustard. Sprinkle mixture over steak and pound into meat with meat mallet. In heavy iron skillet, brown steak slowly on both sides in hot oil. Add combined water and Worcestershire sauce to browned meat. Cover tightly and cook over very low heat for 1 3/4 to 2 hours or until tender. Serve with mushrooms which have been heated in small amount of butter. Garnish with parsley. |
