NO FAIL BUTTERMILK PANCAKES 
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 eggs
2 tsp. vanilla
2 tbsp. mayonnaise (not diet)
2 tbsp. oil
2 to 2 3/4 c. buttermilk

Blend together eggs, mayonnaise and vanilla. Add buttermilk, starting with 2 cups. Now blend dry ingredients. May add chopped nuts or blueberries to taste. If batter seems too thick, add more buttermilk.

Note: contains no sugar.
