ZUCCHINI CASSEROLE 
3 c. thinly sliced zucchini
1 c. Bisquick
1/2 c. Parmesan cheese
4 eggs
1/2 c. oil
1/2 c. chopped onion
Dash of pepper
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. parsley flakes
1/2 tsp. oregano

In a large mixing bowl, beat eggs lightly. Add oil and onion. Mix. Add remaining ingredients, except zucchini. Add zucchini, stir just until zucchini is coated. Pour into 9 x 9 inch square greased baking dish. Bake at 350 degrees for 30 minutes or until top is lightly browned. To serve, cut into squares.
