DIABETIC FRUIT CAKE 
1 1/2 c. applesauce
2 tbsp. liquid sweetener (or 5 env. powdered)
1 lg. beaten egg
2 tsp. baking powder
2 tbsp. cocoa
1/4 tsp. nutmeg
1/2 c. raisins
1/4 c. chopped nuts
1 tsp. orange rind (opt.)
1/2 c. oil
2 c. flour
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
1/2 c. chopped dates
1 tsp. lemon juice

Add oil and sweetener to applesauce and egg. Combine with dry ingredients and fruits. Bake approximately 50 minutes at 325 degrees.
