BUTTERSCOTCH MERINGUE PIE 
1 1/2 tbsp. all purpose flour
1 1/2 c. firmly packed LIGHT brown sugar
1/2 tsp. salt
1 1/2 c. dairy sour cream
3 eggs, separated
1 1/2 tsp. vanilla extract
2 tbsp. butter, melted
Pastry for 1 crust 9 inch pie unbaked
6 tbsp. granulated sugar

Mix first four ingredients. Add to beaten egg yolks, vanilla, and butter. Pour into pie pan lined with pastry rolled 1/8 inch thick. Bake in preheated very hot oven (450 degrees) for 10 minutes. Reduce heat to moderate (350 degrees) and bake for about 30 minutes.

Beat egg whites until stiff. Gradually add granulated sugar and beat until very stiff. Pile lightly on pie and spread to edge. Bake in preheated slow oven (325 degrees) for about 18 minutes. Watch that it doesn't get too brown.
