SOUTHERN EGG ROLL 
1 lb. pork butt
1 bottle of your favorite bbq sauce
1/3 white vinegar
salt
pepper
cole slaw (premade or home made, whichever you prefer)
egg roll sheets
eggs
milk

Preheat oven to 300°F.

THE MEAT Take the pork and cute it into 4 equal size blocks. Season pork with salt and pepper. Place in baking dish and pour in vinegar and BBQ sauce so that it coats the meat.

Place pork covered in oven for 3 hours. DO NOT UNCOVER OR CHECK THE MEAT UNTIL THE TIME IS UP!! Take out and check to see if meat "pulls" easily, if not cook another 30 minutes. Pull pork and place in a bowl.

Preheat deep fryer to 350°F.

Take 2 eggs and mix with 2 teaspoons of milk; whisk together.

Take one egg roll, lay out and place some meat and slaw on the inside. Roll up the wrap very tightly, but do not let the roll rip.

Use the egg to hold together the wrap as though you are sealing an envelope.

Repeat for as many as you want to make. Dip entire roll in the egg; shake off and put in deep fryer.

Deep fry for 2-3 min until they are golden brown. Take out and place on paper towel.

You can eat these just like this or make a Tabasco mayo.

Just mix some milk Tabasco and mayonnaise together to make a dressing consistency.

This is an awesome recipe! Love the flavor of the meat on it's own and in the egg rolls, I would suggest anyone who hasn't tried this yet to try it but eat your first egg roll alone as is, then make the Tabasco mayonnaise and dip the next one! It's hard to decide which way is the best!!! Thanks Matt for sharing your recipe, did I mention I have another roast in the oven now? LOL
