SATURDAY NIGHT PORK CHOPS AND
RICE
 
2 tbsp. cooking oil
1 tsp. salt (opt.)
1 c. regular rice
1/4 tsp. thyme
1/2 c. diced onions
4 pork chops
1/4 tsp. black pepper
3 1/2 c. chicken broth
1/2 c. diced bell pepper
1/2 c. sliced mushrooms

Preheat oven to 350 degrees. Put oil in large skillet; brown pork chops on both sides. Remove chops from skillet and season with salt and pepper. Brown rice in fat remaining in skillet, stirring constantly. Add remaining ingredients to skillet and stir. Turn mixture into 3 quart casserole. Top with the chops. Cover. Bake in preheated oven for 1 hour or until rice has absorbed the liquid. Serves 4.
