HEALTHY PEANUT BUTTER COOKIES 
2/3 c. packed brown sugar
1/2 c. peanut butter, chunky or plain
2 tbsp. cooking oil
1 slightly beaten egg white
1/2 c. whole wheat flour
1/4 tsp. baking soda
1 c. multigrain cereal (Wheaties or Total)

In a mixing bowl stir together the brown sugar, peanut butter and cooking oil until smooth. Stir in the egg white.

In a small bowl combine the whole wheat flour and soda. Stir flour mixture into peanut butter mixture, stir in cereal.

Drop dough by heaping teaspoonfuls onto an ungreased baking sheet. Compact the dough balls lightly and flatten slightly. Bake at 375 degrees for 8 to 10 minutes and cool completely. Makes 18 cookies.

I had to add 2 tablespoons of water to the dough because it was too dry to stick together. Otherwise, a very nice recipe. Also, it yielded 20 cookies using a rounded tablespoon of dough for each.

@Myrna, adjusting the water/flour amounts when making dough is a normal occurrence due to variations in flour, from moisture content to packing density.
