AMBER SKILLET DINNER | |
4 pork chops 1/4 c. flour 1 tsp. salt 1/2 tsp. pepper 1 tbsp. shortening 1 med. onion, sliced 1 c. prune juice 1 tbsp. lemon juice 1/4 tsp. cinnamon 1/4 tsp. ginger 1 (16 oz.) can whole potatoes or fresh potatoes, cut in quarters Combine flour, salt, and pepper. Coat 3/4 inch thick pork chops. Brown chops in hot shortening on both sides. Add onion, prune juice, lemon juice, cinnamon, and ginger. Stir. Add potatoes; cover and simmer 1 hour. (May need additional salt, depending on size of pork chops.) |
