SEAFOOD CASSEROLE | |
1/4 c. butter 1/4 c. all purpose flour 1 tsp. salt 2 c. milk 3 sliced hard cooked eggs 1 c. tuna fish (sometimes I double crab meat & leave out tuna) 1 c. crabmeat 1 c. shrimp 2/3 c. mushrooms 1 c. grated American cheese 1/2 c. chopped onions 1 c. dry cracker crumbs 1/4 c. butter Melt 1/4 cup butter in 1 quart saucepan. Blend in flour and salt. Add milk and cook on medium heat until thickened, stirring constantly to make a white sauce. To sauce add eggs, tuna, crabmeat, shrimp, mushrooms, cheese and onion. Pour into 2 quart greased casserole dish. Combine cracker crumbs and 1/4 cup melted butter and sprinkle over top of casserole. Place in preheated 350 degree oven for 30 minutes. |
