AUTUMN SURPRISE CAKE 
2 c. chopped unpeeled apples
1 1/2 c. all-purpose flour
1/2 tsp. salt
1 beaten egg
1 tsp. vanilla
1 c. sugar
1 tsp. baking soda
1/2 c. cooking oil
1/2 c. chopped nuts
1 c. raisins

Mix apples (Lodi or early Harvest work best!) with sugar and let stand until juice forms. Add sifted flour, salt and soda to apple mixture. Add remaining ingredients and mix thoroughly.

Bake in 8 x 8-inch pan for 40 to 45 minutes at 350°F. Ice cake while hot with powdered sugar.

We like penuche icing and sometimes I add coconut.
