GLORIFIED EGG SHORTCAKE 
2 tbsp. butter
2 tbsp. flour
1/8 tsp. pepper
1/3 c. celery, thinly sliced
1/3 c. cooked or canned peas
1 c. milk
2 tsp. onions, chopped (or chives)
1 tsp. pimento, chopped (if desired)
3 hard cooked eggs, quartered

Melt butter, blend in flour, salt and pepper. Cook over low heat, stirring constantly. Boil for 1 minute. Just before serving stir in the rest of ingredients. Bring mixture to a boil. Serve over biscuits, toast or chow mein noodles. Makes 2 servings.
