GOURMET POTATOES 
6 med. potatoes
2 c. shredded white cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes in skin. Cool. Peel and shred coarsely. In saucepan, add cheese and butter. Heat. Stir until melted. Remove from heat. Blend in sour cream, onions, salt and pepper. Fold in potatoes. Put in 2 quart casserole. Dot with butter. Bake at 350 degrees for 25 minutes.
