SALMON SCALLOP 
1 (1 lb.) can salmon
3 eggs
1 c. milk
1 3/4 c. coarse cracker crumbs
1/2 tsp. salt
Dash of pepper
1 tbsp. instant onions
1/4 c. butter
2 tbsp. butter, melted

Empty salmon, bones and liquid into greased 1 1/2 quart casserole. Break up with a fork. Add eggs and stir with a fork until thoroughly mixed. stir in milk, 1 1/2 cup cracker crumbs, salt, pepper, and onions. Dot with 1/2 butter, stirring in.

Toss 1/2 cup cracker crumbs with melted butter and butter. Sprinkle on top. Bake at 350 degrees for 50 minutes. Serves 6.
