VENISON SWISS STEAK 
2 lbs. venison or beef round steak
3 tbsp. all-purpose flour
1 tbsp. paprika
1 tsp. salt
1 tsp. pepper
1/4 c. cooking oil
28 oz. can tomatoes
1 c. sliced onions
1 med. green pepper, cut into rings

Cut meat into 8 serving size pieces. In a 9" pie pan combine flour, paprika, salt and pepper. Coat meat with flour mixture. In a 10" skillet, brown meat in oil over medium heat. In Dutch oven, layer half each of the tomatoes, onions and green pepper. Place browned meat over vegetables. Layer remaining vegetables over meat. Cook over medium heat until mixture comes to a boil. Cover, reduce heat to low; continue cooking until meat is tender, about 1 1/2 hours. Season to taste. Yield: 6 to 8 servings.
