TURKEY ALA COOK OUTDOORS AND
KEEP THE KITCHEN COOL
 
1 whole turkey
2 tbsp. butter
Poultry seasoning
Salt
Pepper
You favorite stuffing or: A large peeled onion Celery stalks Parsley Seasonings to taste

Prepare outdoor gas grill by arranging lava rocks around the perimeter of a disposable aluminum pan. Fill pan 1/2 full with water. replace cooking grid at its lowest level. Preheat grill.

Stuff turkey with your favorite stuffing or place a peeled onion, celery stalks, parsley and favorite seasonings to taste in cavity. Dress turkey by bending wings underneath turkey and tying its legs together.

Work small amounts of butter between turkey meat and skin, working from the separation between turkey and skin at main cavity opening. Sprinkle outer skin with poultry seasoning, salt and pepper to taste.

Place turkey on preheated grill and reduce temperature to low. Baste periodically with liquid from pan (replace water as it cooks away). Turkey will cook in approximately same time as if it were in a 325 degree oven. Turkey is done when leg pulls from body easily and the juices run clear.
