CARROTS IN ORANGE SAUCE 
1 lb. carrots
4 tsp. butter
4 tbsp. fresh orange juice
2 tbsp. brown sugar
1/2 tsp. cinnamon
2 tbsp. fresh parsley, chopped
1/2 tsp. salt (optional)

Wash and pare carrots. Cut into 1/2 x 3 inch strips. Place in 1 1/2 quart shallow baking dish. Dot with butter, mix together orange juice, brown sugar, cinnamon and salt. Pour over carrots. Cover loosely with foil and bake at 350 degrees for 25 minutes.
