HEAVENLY SPINACH | |
6 tbsp. butter, divided 1/2 lb. mushrooms, sliced 1/2 c. mayo & sour cream 1/2 c. Parmesan cheese 1 (10 oz.) pkg. frozen artichoke hearts, thawed 4 (10 oz.) pkgs. frozen chopped spinach, cooked & drained 3 lg. tomatoes, sliced 1/2" thick 1/2 c. dry bread crumbs Salt & pepper Preheat oven to 325 degrees. Butter a 13"x9" baking dish. Saute mushrooms in 2 tablespoons butter. Combine mayo, sour cream and cheese. Stir in artichokes, spinach and mushrooms. Season with salt and pepper. Pour into dish. Place tomatoes on top of veggies. Brown bread crumbs in remaining butter. Sprinkle over top. Bake 40 minutes. 6 servings. |
