TURKEY LOAF 
1 lb. ground turkey, thawed if frozen
1 c. herb seasoned stuffing
1/2 c. finely chopped parsley
2 ribs celery, grated
1 lg. carrot, grated
1 sm. onion, grated
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. poultry seasoning
1 egg, beaten

Preheat oven to 350 degrees. Mix all ingredients except egg. When well mixed, add egg; mix well. Turn into foil-lined 8 1/2 x 4 1/2 x 2 5/8 inch loaf pan. Allow foil to overhang. Bake at 350 degrees for 40-45 minutes, until center is firm to the touch. Lift out loaf, remove foil and serve.
