SWEET POTATO SURPRISE 
3 lbs. sweet potatoes
2 eggs
3/4 c. brown sugar
1/2 c. melted butter
1 tsp. salt
1 tsp. cinnamon
2 or 3 tbsp. orange juice
1/2 c. pecan halves
1 c. marshmallows
3/4 c. crushed cornflakes

Use mixer. Cook, peel and mash potatoes. Add eggs, 1/4 cup butter, 1/4 cup brown sugar, salt, cinnamon, orange juice and vanilla, mix well.

Smooth out in casserole dish, arrange pecans, marshmallows and crushed corn flakes on top, pour remainder of brown sugar and butter on top. Bake at 375 degrees for 25 to 30 minutes.
