CROCKETT CAKE 
1 c. butter
1 1/4 c. sugar
1 1/4 tsp. vanilla
4 eggs
2 1/4 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. milk

Cream butter until soft and fluffy. Gradually beat in sugar. Add vanilla and beat well again. Add eggs, one at a time, beating well after each addition. Sift flour with salt and baking powder; add by spoonfuls to butter/egg mixture, alternating with spoonfuls of milk. Total mixing time should be at least 10 minutes.

Pour into greased and floured tube or bundt pan and bake 1 hour and 15 minutes at 325 degrees. This is a good basic pound cake, named for Crockett, Texas, which was named for Davy Crockett. Serves 12.
