SQUASH CASSEROLE 
6-8 yellow squash
Sm. onion (chopped)
Cheddar cheese
1 egg
Mayonnaise
Butter

Cook squash and onion, seasoning with salt and pepper. Cook down (or drain) until only a small amount of liquid remains. Add 2-3 tablespoons butter.

In separate bowl beat egg and add 2-3 tablespoon mayonnaise. Grate 8 ounces (approximately) cheddar cheese. (I use mild.) Stir about 1/2 of the cheese into the egg and mayonnaise mixture. Add squash. Stir until well mixed. Pour into greased or buttered casserole. Top with remaining cheese. Bake at 350 degrees for 30-40 minutes.
