CREAMY RICE PUDDING 
2 c. cooked brown rice
1 c. soy milk
1/2 c. walnuts, chopped
1/2 c. raisins
1 tsp. lemon juice
2 tbsp. honey or date butter
1/4 tsp. coriander
1 tsp. vanilla
1/4 tsp. salt

Mix together. Bake at 350 degrees for 45 minutes. May top with unsweetened, shredded coconut.
