CREAMY RICE PUDDING 
2 c. cooked brown rice
1/2 c. chopped nuts
1/2 c. raisins
1 c. milk
1 tsp. lemon juice
12 tbsp. honey or date butter
1/4 tsp. coriander
1 tsp. vanilla
Pinch of salt

Whiz 1/2 cup of the cooked rice with the last six ingredients. In a bowl mix all ingredients together. Put creamy rice mixture into a casserole. Bake at 350 degrees for 30 minutes before it is done, sprinkle unsweetened shredded coconut on top (optional).

Yields 3-4 servings.
