ZUCCHINI CASSEROLE | |
3 c. chopped unpeeled zucchini 1 1/2 c. Bisquick 1 1/2 c. chopped onion (2 med.) 1/2 c. Parmesan cheese, shredded 2 tbsp. parsley 1/2 tsp. salt 1/2 tsp. oregano 1/2 tsp. pepper 1 clove garlic chopped (or equivalent powder) 1/2 c. oil 5 eggs Mix all except Bisquick and zucchini. Then stir them in. Bake at 325 degrees for 30-35 minutes in 13 x 9 pan. Serves 8. Options: I like to add 1/2 cup chopped tomatoes. Add or substitute different cheeses. Use spinach or broccoli instead of zucchini. |
