SALISBURY STEAK | |
1 1/2 lb. ground beef 1/2 c. rich milk 1 tbsp. grated onion 1/2 tsp. salt Dash of pepper 2 tbsp. butter or bacon drippings 2 tbsp. flour 1/2 c. beef consomme 1/2 c. dry, red wine or water 1 tsp. Worcestershire sauce 2 tbsp. chopped parsley 4 oz. can mushrooms Mix beef lightly with cream, onion, salt and pepper; shape into 4 thick patties. Heat butter or drippings in heavy skillet; brown patties quickly on both sides, then remove from skillet. Add flour to drippings and blend well; add consomme and wine and cook and stir until mixture boils and thickens. Stir in Worcestershire sauce, parsley and mushrooms, including liquid; season sauce to taste with salt and pepper; then return patties to sauce. Reduce heat and simmer until meat is done to your taste. May be served over rice or mashed potatoes. Serves 4. |
