8 slices bacon cut into 1 inch pieces 2 sm. onions, chopped 5 c. canned black eyed peas, including juice 1 c. uncooked pork, cubed 2 1/2 c. water 1 c. rice, uncooked 1/8 tsp. cayenne Salt and pepper to taste Saute bacon and onions until onions are tender. Remove from pan. Cook pork in the bacon drippings until lightly browned. Add other ingredients to pan and cook over medium heat about 25 minutes. Serves 6 to 8. Note: Serve on New Year's Day for good luck all year! |
