HOPPING JOHN (OLD-TIME) | |
One pint of cow peas (black-eyed peas or black beans) to one quart of rice, one half pound of white bacon (salt pork, streak of lean, streak of fat). Put peas on to boil and when they have been well cooked (one half to two hours) put in the bacon, and cook until both are thoroughly done (one half hour). Then put in the raw rice and let it cook for 10 minutes, then set aside to steam. If all the water has not been absorbed, drain off before putting to steam. Serves 8 to 10. |
