THE BEST APPLE CAKE 
3 eggs
2 c. sugar
1 c. oil
2 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped nuts
7 c. thin sliced tart apples (about 8 lg. apples)

Beat eggs with mixer until thick and light. Combine sugar and oil; pour into eggs.

Stir together flour, cinnamon, soda and salt. Add to egg mixture. Add vanilla and nuts.

Spread apples in buttered 9 x 13 pan. Pour batter over apples, spread to cover.

Bake at 350 degrees for 1 hour. Cool. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

8 oz. cream cheese, softened
1/4 c. melted butter
2 c. powdered sugar
1 tsp. lemon juice

Beat cream cheese until fluffy. Add butter and mix. Add sugar and mix. Add juice and mix. Spread over cooled cake. Refrigerate.
