JEWISH APPLE CAKE | |
5 to 6 apples, peeled, cored and sliced 1 tbsp. cinnamon 3 c. flour 1 tbsp. baking powder 1 tsp. salt 2 c. sugar 1 c. vegetable oil 4 eggs, slightly beaten 1/2 c. orange juice 2 1/2 tsp. vanilla 3/4 c. walnuts 3 tbsp. honey Grease and flour 10 inch tube pan. Sprinkle apples with cinnamon and set aside. In a large bowl mix flour, baking powder, salt and sugar. Make a well in the center of the dry ingredients and add oil, eggs, orange juice and vanilla. Mix together to make a smooth batter. Spoon half the batter into the prepared pan. Arrange half the apples on top and sprinkle with 1/2 cup of the walnuts and 2 tablespoons of the honey. Cover the remaining batter. Top with remaining walnuts. |
