CHEESE SCONES 
6 oz. self-rising flour
1 oz. butter
3 oz. grated cheese
Salt, pepper, mustard
1 egg
2 tbsp. milk

Rub fat into flour, add cheese and seasoning. Mix in beaten egg and milk. Roll out to half-inch thickness and cut into triangles. Brush tops with egg or milk and sprinkle with cheese. Bake in hot oven (425 to 450 degrees for 15 minutes.
