PEA SOUP 
1 ham bone
1 lb. green or yellow split peas
salt and pepper to taste
3 qt. water
2 carrots (pared and sliced)
1 onion (chopped)

Place ham bone and water in a soup pot, add salt and pepper and bring to a boil. Cook until bits of ham fall away from bone. Remove bone and trim ham from bone. Return ham to soup. Rinse split peas in a colander, add to ham broth with vegetables. Cook until peas and vegetables are tender, about 1 hour. If soup is thick add more water. Taste for seasoning, add salt as necessary.
