SPLIT PEAS SOUP 
1 lb. split peas (green or yellow)
1 gallon ham stock (2 1/2 lbs. ham, bones & water, simmered)
1 1/2 lbs. ham, cubed
3/4 c. chopped celery
1/2 c. chopped onions
1 c. grated carrots
Garlic, salt, pepper, bay leaf & thyme to taste
1/3 c. flour
2/3 c. flour

Cover peas with water; add ham stock, chopped vegetables and seasonings; simmer until soup begins to thicken. In a bowl, put 2/3 cup of warm water and slowly add 1/3 cup of flour whipping until smooth. Add flour mixture to soup for a thick and tasty winter crowd pleaser. Serves 12 to 15.
