GRANDMA'S ITALIAN BUTTER COOKIES 
1 lb. butter
1 1/2 c. sugar
7 eggs
7 tsp. baking powder
1 tsp. vanilla
2 1/2 - 7 c. flour

Soften butter. In large bowl mix sugar, baking powder, eggs, vanilla, and butter. Mix well with a spoon. Add 2 1/2 cups flour; mix well. Add 1/2 cup flour at a time and work dough with your hands as it thickens.

When dough is thick enough to roll, roll out one half cup at a time into a rope. Slice rope into 1-2 inch cookies. Bake at 350 degrees for 10-12 minutes. Ice or decorate as desired.

We had to make an Italian dessert for my son's 2nd Grade International Food Festival. My son had to help with every step of the recipe as part of his Italy project grade and it was a lot of fun watching him bake with me! These cookies were a HUGE hit! My son wanted to use chocolate chips and sprinkles so I made half with rainbow sprinkles mixed in and the other half topped with mini chocolate chips right before baking. YUM! Thanks for posting this - can't wait to try out other great recipes from this site!
