SHRIMP JAMBALAYA 
2 onions, chopped
4 tbsp. butter
1 can tomatoes
1/2 c. tomato paste
4 cloves garlic
2 ribs celery, chopped
1/2 bell pepper, chopped
1 tsp. chopped parsley
2 bay leaves
1 tsp. salt
1 tsp. white pepper
1/2 tsp. red pepper
1/4 tsp. thyme leaves
1/2 lb smoked ham, diced
1/2 lb. smoked sausage, diced
2 lbs. cooked shrimp, peeled and deveined
3 c. cooked rice

Saute' onions in butter for 5 minutes, add tomatoes and tomato paste. Add vegetables and seasonings. Cook 30 minutes, stirring frequently. Stir in ham, sausage, and shrimp. Cook 5 to 10 minutes. Stir in rice and cook for about 30 minutes, stirring frequently. Serves 8. A great meal with salad and French bread.
