SHRIMP AND CRAB JAMBALAYA 
3 lb. cleaned med. shrimp
1 lb. crabmeat (optional)
4 onions, diced
1 lg. bell pepper, diced
3 cloves garlic
3 ribs celery, diced
1 (16 oz.) can whole tomatoes
1 1/4 c. oil
Salt and pepper
Cayenne pepper
3 c. raw rice

Saute onion, bell pepper, celery and tomatoes in oil until it begins to stick and onions turn brown. Add 1/2 cup water and seasoning and cook on medium for 10 minutes. Add shrimp and cook for 10 more minutes. Add 3 cups water and let mixture come to a boil. Add crabmeat, if desired, and rice.

When mixture comes back to a boil, lower fire and cook for approximately 1 hour on low. Serve with green salad and hot garlic bread. Serves 6.
