ZUCCHINI CASSEROLE 
2 c. cooked zucchini (about 4 cups raw)
1 c. grated carrot
1 sm. grated onion

Saute about in 1/4 cup butter.

1 can cream of mushroom or celery soup
1/2 c. grated cheese
1 c. herb stuffing mix

Mix all ingredients; pour into greased casserole. Top with an additional 1/2 cup stuffing mix. Preheat at 350 degrees for 20 to 25 minutes.
