THE BEST PINEAPPLE UPSIDE-DOWN CAKE | |
1 stick or 1/2 c. butter 1/4 c. brown sugar 1/2 c. chopped pecans 1 can pineapple slices, drained (reserve juice) Maraschino cherries 1 box golden butter recipe cake mix Melt butter in iron skillet. Add brown sugar and mix until thick syrup-like consistency develops. Sprinkle with pecans. Place pineapple rings in skillet in a circular fashion. Place cherries in rings to decorate. Prepare cake mix as directed on package SUBSTITUTING water with pineapple juice. Pour batter on top of ingredients in skillet. Bake at 350 degrees for 55 to 60 minutes or until knife inserted in center of cake comes out clean. Cool. When barely warm run knife around edge of skillet and invert on large plate. Enjoy! |
