RICOTTA CHEESE CAKE 
2 lbs. Ricotta cheese
4 eggs
3/4 c. sugar
1 tsp. vanilla
1 box Duncan Hines cake mix (any flavor)
1 box Jello instant pudding
1 c. milk
8 oz. Cool Whip

Cake: Beat Ricotta cheese, eggs, sugar, and vanilla together. Set aside. Make a cake mix. Grease and flour pan. Pour cake mix into pan or dish (3 quart size). Spoon Ricotta cheese mix on top. Set at 350 degrees until done (approximately 40 minutes).

Topping: Mix pudding and milk, then add Cool Whip. Mix together. Top cake when cool.
