CARROT COCONUT SALAD 
1 c. flaked coconut
1 1/2 c. shredded raw carrots
1/4 c. seedless raisins
2 tbsp. fresh lemon juice
1 c. mandarin oranges, drained
1/3 c. mayonnaise
Salt to taste
Salad greens

Mix all ingredients, except greens. Chill and serve on greens. Makes about 4 to 6 servings.
