GINGERBREAD CAKE 
1 tbsp. plain vinegar
1 cup milk
2 cups all-purpose flour
1/4 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 tsp. ground ginger
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/3 cup (5 1/3 tbsp.) butter
1/2 cup sugar
1 egg
3/4 cup molasses

Preheat oven to 350°F. Grease an 8x8x2-inch pan. Add the vinegar to the milk and set aside. This will curdle the milk and give the cake a tangy flavor.

Sift together flour, baking soda, baking powder, salt, and spices. Cream the butter. Add the sugar gradually and cream thoroughly. Add the egg and whip until fluffy. Add the molasses and mix well.

Add the dry ingredients alternately with the milk and vinegar mixture. Stir after each addition until mixed.

Turn into the prepared pan and bake at 350°F for 45 to 50 minutes. The cake is done if a cake tester or toothpick comes out dry with no uncooked batter clinging to it.

Serves 8.
