INDIAN SUMMER STIR - FRY 
3 carrots
3 med. zucchini, cut in 1/2 inch slices
1 sm. onion, sliced, separated into rings
1 sm. green pepper, cut in 1/2 inch sq.
1 c. fresh or frozen corn
1/2 c. sliced celery
4 lg. mushrooms, sliced
1/4 c. Wesson or corn oil
1/2 tsp. salt
1/2 tsp. basil

Quick cook for fresh flavor. Prepare vegetables; keep separate from each other. Heat oil in a wok or skillet over medium heat. Add carrots, zucchini and onions, stir to mix. Cook covered 3 minutes, stir once. Stir in green pepper, corn and celery; stir and fry uncovered 3 to 5 minutes. Stir in mushrooms, salt and basil. Stir and fry about 2 to 3 minutes longer. Do not overcook. Makes 4 servings.
