7 LAYER SALAD 
4 c. lettuce (approximately 1 head)
2 c. carrots, sliced or shredded
1 c. green pepper
2 c. cooked chicken or turkey
1 (10 oz.) frozen peas, thawed (not cooked)
1 lg. red onion, slice thinly
1 c. fat free mayonnaise (or sour cream)

Place lettuce in bowl. Sprinkle with 1/2 teaspoon salt, 1/2 teaspoon sugar, 1/8 teaspoon pepper. Layer other ingredients as listed. The mayonnaise is spread in a layer on the top. Do not mix it in. Cover tightly and refrigerate at least overnight. Toss when ready to serve.

Substitute any other ingredients (or make more layers!) such as zucchini, celery, mushrooms, tomatoes, bacon (1/2 pound cooked and crumbled), ham (2 cups), hard boiled eggs (5, sliced), fresh spinach (1 pound), Swiss cheese (2 cups, 1/2 pound).
