SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potatoes
1 c. sugar
3/4 stick butter
2 eggs
1/2 c. milk
Pinch of salt
1 tsp. vanilla
1/2 tsp. cinnamon

Beat together. Pour into greased baking dish.

TOPPING:

1 c. brown sugar
1 stick butter, melted
1/2 c. flour
1 c. chopped pecans

Mix together. Put on top of sweet potatoes. Bake at 350 degrees for 30 minutes.
